Low Carb Chocolate Cake

In the same way that all work and no play makes Jack a dull boy, all meat and no goodies makes Jack a dull low carb dieter. Low carb chocolate cake can break that routine.

Now, I’m of the mind that the idea of the low carb diet is to completely break the dependence on sweets, with the exception of getting into the maintenance mode and adding some low carb fruits. I say this because low carb deserts are like an alcoholic drinking near beer; it’s just a matter of time until they want the real deal. But, by popular demand, we have included some low carb deserts here, starting with low carb chocolate cake.

Chocolate Cake For Low Carb Dieters

  • 1/2 cup butter
  • 110g unsweetened baking chocolate cut into cubes
  • a teaspoon and a half of vanilla (use real, not imitation)
  • 4 medium eggs
  • 2 cups Splenda No Calorie Sweetener With Fiber
  • 1/2 cup unsweetened cocoa powder

In a large microwave safe dish, heat the butter and the chocolate cubes on high until the are melted. Use a whisk to make them smooth then whisk in the vanilla. After allowing the mixture to cool a few minutes, start beating the eggs into the mixture one at a time, then add the Splenda artificial sweetener mixing in until melted.

Sift in the unsweetened cocoa powder and mix but only lightly – you don’t want the cocoa to be ‘well blended’ – more like folded in. Pour the mixture into a grease 8 inch cake pan (round is probably best) and place in the middle of a preheated 190degC oven for 20 minutes or so - until you see a light crust forming around the edges of the of the cake. After you see this, pull it from the oven and let it stand for a few minutes to cool on a rack for about 6 or 7 minutes.

Now you can loosen the cake around the crusted edges with a thin knife or a cake server (might as have the tools out so you’ll be ready to dig in) and turn the entire cake pan upside down onto a plate allowing the cake to fall out. Let it finish cooling completely. After it is done cooling, dust it with a little more Splenda and serve. If you want, you could put a little low carb whipping cream in it, or make your own low carb whip cream at home.

Eating the low carb chocolate cake is best done when you’re alone because visitors will certainly want to share it with you, thus cutting into your satisfaction and indulgence!
