Low Carb Recipes - Easy Low Carb Country Boy Chili

Mom used to make an awesome Chilli that I really missed when I went on a low carbohydrate diet. Hers had beans in it, which I can live without. Fortunately, I was totally unaware that lurking in the next low carb recipe book was the solution to my Chilli woes. I adapted the recipe for myself. In fact, I pretty much just shoot from the hip when I make this and I doubt I ever make it the same way every time.
You can make this Chilli as hot or mild as you like. As with all recipes on this site, they are like recipes with training wheels. Once you learn to ride, you’ll be able make them please your pallet by making them hotter or milder, or adding and taking away stuff. Just please don’t ride in the chili.

Easy Low Carb Country Boy Chili

You will need these ingredients for this recipe:

  • 1.2kg of ground beef in large chunks or Chilli style (can use part ground pork or veil) * don’t break the Chilli up into little tiny pieces –large chunks are much better.
  • 1 medium onion chopped
  • 1large can of crushed Italian tomatoes
  • 2 Serrano chilies diced (more for more heat)
  • 2 jalapeno chilies diced (more for more heat)
  • 2 small cans of diced green chilies
  • several dashes of Tabasco (less for less heat)
  • 3-4 tablespoons Chilli powder (more if you like it)
  • 2 tablespoons ground cumin
  • 2 to 3 tablespoons garlic
  • 1 to 2 tablespoons salt
  • 1 tablespoon dried cilantro
  • 1 cup of brewed coffee or beef bullion
  • 1 six pack of beer

Brown the beef in a big soup pan with the chopped onions. After that’s done add all the rest of the ingredients, only adding one of the beers. Bring to a low simmer and cover. Make sure to stir often. You should let this simmer for at least an hour, and two hours or more is best. If it’s having a hard time thickening, remove the cover and let it simmer down to reduce some of the liquid

Garnishes: for added flavor, you can put a little sour cream, shredded cheese, extra Tabasco or extra onions on the chili. This also makes for a good dip with pork rinds on a chilly Sunday while watching football. Also, since the Chilli has to simmer for awhile, this will give you plenty of time to drink the other 5 bears from the six pack.
