Low Carb Deserts - Peanut Butter Cookies: The King Of Keto Cookies
Whether every day, or occasionally, or when we were children, cookies
have been a part of everyone’s life. Some can eat a few cookies and put
them away, but many of us that get the cookies and ice cream hankering
have sat down and ate a whole bag full of them at one time.
But that all changed when we went on the low carb diet (or at least
it’s supposed to). But cookies don’t have to be an absolute no-no on
this weight loss diet. If the cookie monster starts drawing you into the
cookie urge, try this simple Low Carb Peanut Butter Cookie recipe.
Low Carb Peanut Butter Cookies
1/2 cup chunky sugar free all peanut butter
3/4 cup heavy whipping cream
2 Tablespoon Brown Sugar Maltitol Crystals
1/2 cup Splenda
1/2 cup chopped pecans or almond
4 Tablespoons almond flour
1/2 teaspoon baking powder
2 teaspoons vanilla real extract
Combine and mix all ingredients well. Lightly oil a cookie sheet or
use of those non-stick foils. Take a tablespoon and start dropping the
cookie dough on the sheet (you can use teaspoon fulls if you prefer more
smaller cookies). Place these in the center of a preheated 190degC
oven. Keep your eye on them because you do not want them to burn. It
should take them about 10 minutes to cook, and you don't want them to be
hard, just set.
You should get about 10 large cookies out of this with each having
just under 4 grams of carbs. Be careful because these add up fast if
you're enjoying the cookies and can't stop eating them.
Good uses for these low carb peanut butter cookies are as a quick
breakfast; have one or two dipped into your coffee, or as a snack with
launch. Of course, they're good any time, but I say the above because if
you are running off to work in a hurry, or only have a couple of them
with you at work, you will eat less of them, and it's not worth blowing
your low carb diet because you ate one or two too many cookies.
If you want to vary them up occasionally you can add little bits of
cranberry, blueberry or strawberry in them. You could also add some
unsweetened dark chocolate in them. This might take a bit more sugar
substitute to sweeten the chocolate.
